This has recently becoming increasing popular. This may be due to its ease of carving, lean
tasty meaty and very quick cooking.
This really is rolled sirloin of lamb, the two loins with the bones removed and rolled together to create an easy to carve roast. The saddle also lends it self to stuffing with a nice stuffing.

Cooking Guidelines | Pre-heat oven to 200C/GM6. Bring roast to room temperature and place in oven and roast for 20 minutes. Then reduce temperature to 190C and continue roasting for 30 minutes per 500g. After the roast comes out of the oven, cover it with foil and allow to rest for at least 10-15 minutes. This allows the meat to relax, making it more succulent and easier to carve. |
