Our Orkney scotch brisket is a great flavoursome roasting joint as well as being one of the best value for money roasts. This cut lends itself well to long slow cooking and will almost melt in your mouth.
Cooking - for best results - oven temperature 170o - roast uncovered for about 1 hour, reduce oven to about 150o and top up meat with stock/seasoning (about 1/2" of liquid) and cook for approximately a further 3 hours.

Cooking Guidelines | Remove all packaging and allow brisket to 'bloom' for 10-15 minutes. Pot Roast or Slow Roast in a preheated oven at 180C/GM4-5 for 35 minutes per 450g plus an extra 30-40 minutes. |
